Not to beat a dead horse here, but I saw your Instagram video on the Peso, and it looks to be a solid 3 and quite lovely from that view.
You are correct. Coins are subjective and toning is even more so. The true monsters (level 6) are fairly rare and I would think there would be somewhat more consensus on those. However, a bunch of the nice toners we all collect fall into the 3-5 range. Some of these we will be fairly close to each other's scores but others might have several point swings based on what each of us finds attractive.

Okay, these are NOT my Morgans. They almost were, from a Las Vegas auction in 2016. I lost out on both, by under $250. They were part of a celebrated collection. Photography is professional, and I have seen the coins in hand: A) 1881s PCGS MS 68+ CAC B) 1887 PCGS MS 66+ CAC
6 and 5 for my guesses. And @ddddd I was at 5 on the nickel. Are we just assuming a reverse is white if it isn’t pictured?

This is a must read site for information on some of the celebrated collections, and toned Morgans in general: https://www.monstertonedmorgans.com/ The Aurora Borealis collection was an amazing set of toned coins. I was privileged to see them at the Venetian in Vegas, for that big auction in 2016. I did get outbid on those two, but bought two lesser toners for a fraction of the selling price of these two beasts. I would go high 6 for the 81s, and low 6 for the 1887. Both are Godzilla monsters, by my standards.
I’m at 6 and 5 on those two Morgans also. The 1881-S is an absolute beast of a coin. The field and cheek chatter on the 1887 bothers me, and that coin is clearly market graded at 66+ to take into account the massive eye appeal. That kind of cheek abrasion on a blast white coin would be grade limiting to 64 IMO.
I’m at 6 and 6. Love the clean fields of the first. Love the intense red of the second. Both monsters in my opinion.
I didn't get any updates on this thread so I missed the Jefferson and 1880-S Morgan. I'd give the Jefferson a 5 and the Morgan a 3.
