My wife and I had a wonderful dinner yesterday. She made oven fried chicken, green beans, and homemade potato salad. I love Sweet Baby Ray on the side for our chicken. There are so many dishes that are easy to make for just the two of us. All three children are grown and we are blessed with beautiful grandchildren (11). We live in the greatest area in North Carolina. One daughter lives about 45 minutes away, another lives outside the beltline of Atlanta, and my son's family also lives outside of the beltline. My wife recently turned 71 and I will be 73 in December. My specialty is deserts. I love to make and eat what I make from scratch. I made a Blackberry "Quickie Pie". It's easy to make.

Take a stick of butter (not margarine), cut it in quarter inch squares and lay them on the bottom of a 9" square Pyrex dish. Set the oven at 350 degrees and put the Pyrex to the middle of the oven. While the butter melts, mix one cup of self-rising flour, one cup of sugar (real sugar) and slowly add one cup of 2% milk. Mix the batter until it is a smooth batter. By the time the batter is mixed, take the Pyrex out of the oven and set it on top of a surface burner and pour the batter into the Pyrex, then add a blackberry pie filling slowly into the batter evenly spread. Make sure the oven is now at 350 degrees and then put the Pyrex into the oven again for 45 minutes. Check the dish to see if the top is a light brown, if it is, take it out of the oven and lightly spread sugar on top, then put it back in the oven for about 5-10 minutes. Once the top is a rich brown, or to your liking, take it out of the oven. Dish out the Quickie Pie (some call it cobbler) into a desert bowl. Some people like vanilla ice cream with it. If they do, add the ice cream to the desert bowl and quickly eat it because the ice cream melts quickly. There are many other fruits that can be used ... Peach, Cherry, Apple. It is a great dish for guests. I won a baking contest with this recipe that my mother taught me before I was drafted during Vietnam.
