Well, by the time they get to a roll and in your hands the coins have been circulated and probably machine rolled. The machine rolled coins are pressed up against each other pretty tight. Which has its pros and cons.( ex: less rubbing from lack of give space/ possible scratching from metal machine parts). Once I’ve opened a roll I generally spread them out and seperate modern Jefferson’s from pre 2003. One thing I do that not a lot of people probably do is seperate all the 70s and 60s nickels. I do this to try to make full sets for those decades, as sooner or later they will be hard to find. I’ll also start the 80s once I’ve completed the 2 60s I’m working on. ( Dang 60philadelphia is allusive!) but yeah, unless the roll is uncirculated , like a new 2018, I wouldn’t think anything your doing by sorting them is going to cause much damage. The only ones I don’t stack are any gem specimens I find or ones that will fill a hole in my books, but this is primarily to keep the date visible so I don’t accidentally toss it into the trash piles. I used a foam board (bought at the 99cent store) and drew in seperate sections for each type of coin. It really helps keeps things organized, especially for saving full decades. I’ll post it a little later tonight.
