Welcome, and welcome to a great hobby! A lot of people try the 'one from every country' idea. I started with an older Krause 1901-date, and quickly discovered a few things. Great idea and fun, but how did I want to pursue 'country'? Dive deep into Indian Princely States, the German States, etc. Not only that, I found it difficult to confine myself to just one coin per country, which is how I now have a rather extensive Albanian coin collection, it was hard getting past the letter A. In any case getting some old volumes and doing some old fashioned page flipping is a good way to generate ideas. It sounds like you have some great ideas. I dropped the OFEC to focus on a Japanese type set (which has also expanded to date sets), the Albanians, with a few sidebars of French Fourth Republic and other random things. The beauty is you can pick whatever tickles your fancy. Another approach I've seen has been a variation on the 'Box of Twenty'. Basically, from the person who I think originated that, was keep one slab box of 20 coins that appealed for whatever reason. No theme, rhyme, or reason. He figured (correctly) he could condense to a few quality pieces after amassing a rather large accumulation. It came in handy during a hurricane evacuation and all he had to do was grab one box if I recall that story correctly. Have fun!
