Absolutely true, it is as hard or easy as you want it to be. It is also as expensive as you want it to be. Anyone that thinks there aren't any expensive coins in the jefferson set ought to go find a high grade 43/2P or a 42 d/horizd. Think about it though, how much of an investment is a low grade liberty nickel set? How expensive are those? How many of those sets that look like poo have we all bought and sold? What about a lincoln set without 2-3 of the keys? Not too expensive in VG-VF. Thats the nice thing about jeffersons and lincolns, a youngster can start a collection with a few rolls from the bank for face value. The investment for me is in my enjoyment and the challenge, I get to know a coin inside out and the most satisfying set I ever put together is my registry set jeffersons. But collect what you like and you wont have to worry about an investment.
I love collecting Jefferson Nickels. I think that the design of the Jefferson Nickel is the prettiest modern coin design. I love the portrait of Jefferson and Monticello. As far as increasing in value, well, I am not sure anyone really knows what coins will increase in value. However, like many above have mentioned, Jefferson nickels are not scarce. Scarcity and popularity are what increase value.
