Most silver dollar collectors like big silver coins and aren't likely to change. There is much more likely to be a demographic change over the years though. Newer and younger collectors like silver but not to as large a degree as older collectors. They'll probably like big coins as well. Many will collect Morgans. But there might well be a diminuation in the demand if historical trends hold true.
