I've broken up a mint set as well. I am currently working on a quarter book and a dime book, so I took my 1968 mint set and put those 2 coins in the books. Many of them are circulated, but I do have a 1972-D gem in the quarter slot. I haven't broken up a proof set, but it is nice to get proof quarters in Littleton packaging for 34 cents. (In that deal, there was a W quarter as well!)

Those mint sets, if in lower MS grades, are worth putting in a roll and nothing more. Many that are out of their packaging are sadly circulated, and what once was an uncirculated coin could now be an impaired coin.

But 515? That's amazing! You sound like someone who would go through a box of dimes and find proofs instead of nothing, like I did. The proof I found was a Saratoga quarter in a federal reserve roll. I mean, just how can you find that many coins unless you've looked through thousands?
