    A copper surface discolors fairly fast due to the reaction of copper with oxygen to form oxides of copper. These oxides of copper will react with acetic acid (vinegar is 5% acetic acid) to give copper acetate, hence the blue color. Nickel should also react with acids, but the reaction is slow.
