Not all of us can. But the main thing is to buy the best stuff you can afford. That's the nice thing about this hobby. Within any budget from tiny to huge, there's good stuff to be found.
Like @lordmarcovan said. Alot of us cannot afford the higher priced pieces and that's ok. I realized that I was more of a coin hoarder than what I really wanted to be which is a numismatist/collector who enjoys CRH'ing, lol. I think some people who can afford higher priced pieces have a higher income to begin with or have worked hard through buying and selling to get more money to upgrade their collections which is what I hope to be able to do some day. You as well, I'm sure. The fun is finding the best possible piece you can afford and going for it! I heard the guy above say that he had one box of coins in one of his posts and I thought, what the heck am I doing with all this garbage that I don't really want or need? Take your impulse buys and learn from them and try to profit if you can so you CAN buy what you really want. Good luck!
I have one small box of coins in my core collection. While I'm no longer sticking to the strict "Box of 20" rule as of mid-2016, and the "Eclectic Box" has expanded to the point it's nearing 50 pieces now, it's still a pretty small collection by most people's standards. But those 45-50 pieces represent the dozens, hundreds, maybe even thousands of other coins I bought, swapped, and sold in order to acquire the few I have now. I am not a big-budget guy. My salary as a low-ranking hotel clerk is barely over the minimum wage in some places. I didn't acquire the few $500+ pieces I own by using my paycheck* - that goes to the bills. *By not taking much out if my modest paycheck to feed my hobby, it also keeps my marriage harmonious. "Happy wife, happy life", as they say. Better that the collection feeds itself... mostly. I'm lucky if I have a spare $20-50 lying around to put into my coin budget most of the time. This means if I want a pricier coin, I have to either save up (I'm terrible at it), adjust my tastes downward (hard to do, but not impossible), or wheel and deal and swap and haggle (my chosen method). The coins you see in my Eclectic Box collection represent 20 years of that final strategy. I sold and swapped away a lot of stuff (some of it pretty nice) to get the stuff I have now. And those coins I sold were themselves the product of many other coins I sold to get them. It is an ever-evolving collection. It will never be huge nor as awe-inspiring as what some folks here have, but I'm OK with that, and proud of what I've assembled so far anyway.

Those "bygones" in that gallery only represent some of the coins- maybe half or less- of just what I've sold only in the last four years! I wish I had archived my sold stuff before. This summer I sold the single most valuable coin at a loss, and then the money I got from it went out of my collection altogether. But it went to a good cause.
