Ever since the pandemic, prices of literally everything have gone up quite drastically.

I am not aware of many countries issuing higher denomination coins or banknotes due to inflation. Only one that I can think of is Uzbekistan. They issued new 2000 som coin and 200,000 som banknote in 2022.

    Do you know of any?

Or I guess many government around the world want people to use cards...

All I know is that my bill of choice these days is the $50 when it used to be the $20. Easier to get change for than $100. They printed record numbers of them in 2021 and 2022. I'm not aware of any countries issuing larger denominations since 2020.
