Howdy Rick - Welcome to the Forum !!

That kind of depends on the collection - and on you. If you know a good bit about coins and you have an established and trusted name on ebay - then ebay is a good way. But if you don't have the two requirements - then your best bet is to sell them to a dealer in my opinion.

I have 60 American Eagle silver dollars 1987 and 1988

I went by a coin shop today and they offered me $8.00 per coin.
These are in there original plastic containers, 20 coins per container.
Would you say this is a good deal for uncirculated condition?

I have a new hobby of collecting vintage Seiko dive watches
and want to convert my coins to watches.

I also have eight proof Eagles dated 89,92,93,93,97,98,98,99

I also have 21 proof sets from 1982 thru 2003 with some years
    missing and some duplicates.

    Thanks
    Rick

$8.00 per coin is a very fair offer for common date UNC silver eagles.

For the proof eagles and proof sets, expect to be offered somewhere between 70% and 85% of the bid you see listed in the Greysheet you may have downloaded by now. Possibly less for the Proof eagles if you no longer have boxes or Certificates with them, or if the box is damaged. Buyers for these are very demanding for packaging in nice shape.
