firstname.lastname@example.org Perhaps they might be helpful.
This is their website: http://www.hdmhg.de/; seems they do not have a walk-in store. In Mannheim there is KPM which does, according to the dealers guide in MünzenRevue: http://www.kpm-mannheim.de/ But in both cases, asking in advance cannot hurt.
Here are two German coin dealer associations; they have lists of dealers which could be helpful too.

As for coin shows, well, the biggest one (and apparently the biggest coin show on earth) is the World Money Fair in Berlin, annually in late Jan/early Feb. But just like the Numismata, it has its "siblings". In mid-September, for example, there is one in Stuttgart: http://www.worldmoneyfair.ch/smm/english/index.html ...
http://www.bussopeus.de/ but again I do not know whether you can walk in and buy coins. Just call/mail and ask. And here http://dersaarspezialist.de/ is a store in Saarbrücken; don't know the place, and it may be a little far from Baumholder, but who knows ...
Any info is better than none! Now I just have to talk my wife into a trip.
