The photos aren't very good close ups to tell what those two Morgans would grade at. Also, how many coins in that binder, and what denominations, and types, ie Morgan Dollars, Peace Dollars, etc., and years of the coins. As far as the stamps go, someone knowledgeable about stamps would have to tell you about them and their potential value.
Your set is worth the price of bullion, maybe. The price of bullion changes from day to day but on resale to a coin shop they may give you $13 for every silver dollar in your binder. That's $13 dollars on a good day. If you have a complete set, I think its 35 silver dollars. If you times $13 by 35 you may get $455 total. The commemorative society you mention is a ripoff and is not connected to the US Post Office in any way. Personally I wouldn't insure that set at all.
