Any currency/bill-only conventions, or gatherings where they dominate instead of coins ? I'm going to be going to FUN in January and was surprised that only 5-10% of the tables will be bills/currency. Thought it would be more.

Memphis, Tn. used to host a paper money show back in the 80's. If you subscribe to Coin World, in their monthly issue (blue bag) in the back of each issue there are several dealers who could answer your question.
According to the FUN web page they are expecting ~1500 dealers. 5%-10% will equate to 75-150 dealers specializing in paper currency. That's predicated on the accuracy of the info you've been given about 5-10%. That sounds like a pretty decent representation of paper currency IMO. Not sure if any of the other paper currency exclusive shows would have that many dealers in total. Good luck at FUN. Wish I were going.
That was what some vets here quoted, and you're right: in absolute terms, it's not a bad number. At my local coin shows, I see maybe 10-15 dealers with cases of bills/currency.
The SPMC lists upcoming Coin/Currency conventions on their website. I see the Whitman in Baltimore is coming up in November. I’m fortunate that FUN is a 90 minute drive when in Orlando and a 10 minute drive when held here in Tampa. Many coin dealers also have a smattering of paper money in their cases.
The 5-10% was just a wild guess on my part. I'll make a rough count at the Fun show in January. There will be a section of mostly Paper Money dealers. Should be enough to keep a person busy looking for a day or so.
