How is the karat, 10K, 14K, 18K of gold jewelry determined? I know it is the amount of gold in the piece, but how is it established?

Thanks ND. I would have never checked with JC Penny on that one. So in other words you have to destroy the piece with either fire or acid, not what I wanted to do.
