The U.S. Mint guarantees you the coins are at least one ounce! More is acceptable and less is NOT! Also the height of the rims of the Eagles are determined by how hard the coin is struck! It appears the 2005 Eagles are a little over weight but the major factor is how hard they have been struck thus creating a higher rim. You are not the first to notice the difference. When the statehood quarter program started a whole lot of collectors noticed a huge difference between rolls of Denver and Philly quarters. The problem is really not new! Just a whole lot of people paying more attention.
Go back and check the edge of a 1986 SAE. Compare it to the 2005 model. There is a significant difference, more IMHO than can be accounted for by strike differences.
