Welcome to CT @robin f. Coins colors can vary a great deal, based upon environmental conditions. Age, circulation, and what they have been subjected to and that all has an effect. As for Jefferson being bigger, that too can be because of the color. It appears to be bigger visually, but isn't.
As Mountain Man said, it depends on the environmental conditions mainly. Also, the 58 could have been polished or dipped, giving it fake luster.
