    Does it tell you how many prospective buyers are out there and interested in the coin that you've posted?

    I’m pretty sure it is simply the number of people who have placed the item to their watchlist.

    This. They may be watching so they can bid on it later, or so they can see what their similar item would sell for, or because they want to see if anybody will be taken in by a fake or badly overpriced listing.
