Homemade sushi! It's surprisingly easy once you get the hang of it. I used to think you had to have lived three years in a Japanese zen-monastary and only breathed purified mountain air before you would be considered worthy enough to even look at a sushi cook. Wrong assumption as it turns out. Simply cook some sushi rice.Takes no more than 15 min. While it's on the boil slice a fresh salmon, some avocado, cucumber, shrimps or whatever tickles your fancy, as long as it's fresh. Put some rice ( nice and sticky, that's it), avocado and salmon on a leaf of seaweed, roll it tightly in a reed mat and slice it up. That's it, really. A bowl of soy sauce and a dash of wasabi on the table. A pot of tea. There's your zen-master. I'd post a pic, but I liked it so much I ate it all...
Interesting thread! My diet is pretty boring, I’m afraid. I eat light in the evening. Apples and cheese is a frequent supper for me. Fuji apples are my favorite. My favorite cheese is Norwegian Jarlsberg.
I looked thru my Email and text messages and did not come across your invite for dinner. Oh well, maybe next time.
Dinner was rather spartan, but delicious. Everyone is invited to partake of our bread and butter anytime ya'll wish. It was a huge loaf which we will be eating on till Kingdom Come. Break my heart!
Maybe. Many years ago, we tried. Got the bamboo mats for rolling, the seaweed sheets, the right kind of sticky rice, the fresh fish and cucumber (hadn't yet accepted avocado at the time). Oh, and a very sharp knife for cutting the rolls. I wouldn't have thought it was possible to make Möbius sushi, but that's the best way to describe what we ended up with. We decided that restaurant-made sushi was worth every dime.
My wife and I had a wonderful dinner yesterday. She made oven fried chicken, green beans, and homemade potato salad. I love Sweet Baby Ray on the side for our chicken. There are so many dishes that are easy to make for just the two of us. All three children are grown and we are blessed with beautiful grandchildren (11). We live in the greatest area in North Carolina. One daughter lives about 45 minutes away, another lives outside the beltline of Atlanta, and my son's family also lives outside of the beltline. My wife recently turned 71 and I will be 73 in December. My specialty is deserts. I love to make and eat what I make from scratch. I made a Blackberry "Quickie Pie". It's easy to make. Take a stick of butter (not margarine), cut it in quarter inch squares and lay them on the bottom of a 9" square Pyrex dish. Set the oven at 350 degrees and put the Pyrex to the middle of the oven. While the butter melts, mix one cup of self-rising flour, one cup of sugar (real sugar) and slowly add one cup of 2% milk. Mix the batter until it is a smooth batter. By the time the batter is mixed, take the Pyrex out of the oven and set it on top of a surface burner and pour the batter into the Pyrex, then add a blackberry pie filling slowly into the batter evenly spread. Make sure the oven is now at 350 degrees and then put the Pyrex into the oven again for 45 minutes. Check the dish to see if the top is a light brown, if it is, take it out of the oven and lightly spread sugar on top, then put it back in the oven for about 5-10 minutes. Once the top is a rich brown, or to your liking, take it out of the oven. Dish out the Quickie Pie (some call it cobbler) into a desert bowl. Some people like vanilla ice cream with it. If they do, add the ice cream to the desert bowl and quickly eat it because the ice cream melts quickly. There are many other fruits that can be used ... Peach, Cherry, Apple. It is a great dish for guests. I won a baking contest with this recipe that my mother taught me before I was drafted during Vietnam.
I had a nice bbq rib dinner last night. Of course I didn't prepare it. I was invited over to a neighbors house. I guess back to cat food today.
I'm guessing the west end of the state, then...? I do love the mountains! Haven't done a lot of cooking yet, but I've got a half pork loin I'm going to turn into pulled pork. About as simple as it's possible to get: cut it into chunks, put it in a pot, cover with cider vinegar, add red pepper flakes. Boil until done. Sometimes I'll sear the outside on the grill before starting, but it's nice even without that. Tonight might be Indian, but nothing to be proud of -- chicken in tikka masala sauce from the Aldi bottle, various frozen tasties from Trader Joe's. Rice, the Basmati we like has been out of stock for a while, so we'll try jasmine instead. We do at least cook rice "from scratch".
We did our take on a southern style omelet this morning. Cook about a third of a pnd bacon per omelet. We used a cherry smoked thick cut bacon. Beat eggs in a bowl. Add fresh fine diced habanero to your liking. Light on the milk so that it lays flatter in the pan. Once the egg is mostly cooked. Grate and add both yellow and white sharp cheddar cheese, bacon, and fresh pico de gallo.. Fold the egg when the underside gets golden. Top with cheese and two spoon fulls of pico to the top and cover for 10 minutes on medium low. If you like spicy it's easy cut plenty of habanero and sprinkle it on the top. Yum!!
My wife is making me a sandwich right now: pickle loaf and provolone. I'd trade it for anything mentioned so far except the sushi. Nope, can't do it. @Deacon Ray: try Scandinavian Grädost. You'll never go back to Jarlsberg. @Johndakerftw, I'd be glad to eat your mom's leftovers any time. Never met a bad mother's leftovers. Steve
This really should have been posted in General Discussion, but since the Ancients community here is kind of an enclave unto itself, I'll leave it here unless someone flags it. Ladymarcovan has done more home cooking of late. Homemade "Tater Soup" (potato, bacon, green onion, cheese), Vegetable Soup, and Cube Steak with gravy. Mmm.
I am having simple stuff tonite. Flax bread freshly baked from local "Farmboy" store. Lachschinken (coldsmoked pork tenderloin thinly sliced/ with Blackforest style smoked turkey (thinly sliced) From our local German Deli. on buttered bread. Then, I will have for dessert some fresh raspberry torte with freshly ground starbucks coffee. c
For breakfast I had pancakes and sausage. For lunch I ate some Thai spring rolls. For dinner I plan on making a cheese ball.
