Because they are alcoholics and sterno is a cheap source of alcohol. Unfortunately it is also usually methyl alcohol, which is poisonous, can make you go blind, and even kill you. The alcohol content of squeezed steno is also typically much higher than that of regular alcoholic beverages so it needs to be cut with something to make it more palatable, hence the juice.
