    Why did they use the V for the U in trust?

    It is actually A U, but i believe the U was not used in the ancient alphabet, but rather the shape that resembles a "V" nowadays.

    The 'V' is actually a stylized 'U'.

    It's the same on the Standing Lib quarter.
