This summer I will be traveling on a tour to Paris, Barcelona, Madrid and Seville. I will have some free time and would be interested in stopping in some coin shops there. Does any one know any good shops I should check out?

As for Paris, keep in mind that "coin" (fr) means "corner" (en). So some of the results will not have anything to do with coin shops. ;)

In downtown Paris, CGB is a good dealer (not exactly cheap though), and there are a few more in and around rue Vivienne. As for Barcelona and Madrid, the coin markets may be interesting. The one in Madrid is on Plaza Mayor, every Sunday morning; the one in Barcelona is on Plaça Reial (also on Sundays). Both are a mix of coins, paper money and related items but worth a visit.

I can't say anything about coin shops in Seville, but that city is one of the only two that have free tapas when you order drinks at bars. Basically, you get a free appetizer with every beer/wine/drink. Also, they've got quite a cathedral there; I'm certain you had planned to check that out as well. Oh, and if you get the chance to order churros con chocolate while you're there, definitely go for it. They're delicious. Sorry for not having anything coin related to add.
