Do they charge me when the buying period ends or when they ship the set?

If they don't trust you, they collect the money before they send the coins.

I have always been charged a couple of days before shipment.

I think you are right. It's amazing how quickly they blacklist a person just because of a couple of comments about their website.

I've had them send me stuff two days ahead of taggin' the card.

Does that mean you trust them more than they trust you, or is it vice versa ?

I think it's their trust in me (poor fools :)). The last two products that I ordered didn't appear on the charge statement until two days after they sent them out to me. Basically, they charged the card when the packages hit the front door.

The will charge you at the time of shipment, give or take a day or two.

Just a warning: If your credit card expires between the time that you place your order and the time of shipment, your order may be automatically cancelled. I've seen it happen.
