Hmm. I never noticed a problem with the eyes and a quick trip through CNG's archives shows varying degrees of profile and varying numbers of eyes. SevA's photo immediately above looks like many of the "cyclops" coins. It's just the angle of the picture. I don't think any of these are meant to show a cyclopian bull, although that would make for a more interesting story
Hmmm. Maybe. I've seen plenty of cattle in profile. I grew up on a Simmental cattle farm in Kentucky. (Warning: Do not bale hay shirtless in July). But the bull on the coin is not in full profile; it seems to be facing outward a bit, and the eye is too far over. But maybe that's just the die engraver trying to represent the features in the above photo. I just think if they can engrave fine details on a shield, they could do a better job with that eye placement.
I bet a cyclopian bull would be easier for a popa to sneak up on and stun with a hammer. No peripheral vision!
