Candied bacon made with maple syrup is awesome by the way. Add some cayenne pepper to kick it up a notch.

 

I know this is a slightly old message thread but I wanted to ask if anybody knew how the RCM, for example, chooses what privy marks to use? I can see the logic of using Chinese lunar privy marks but some of the others I don't quite understand.

easy, anything that they think will sell

 

In some cases the group or organization of the privy mark buys them. The Canadian mint makes and sell them and they split the profit. They are a made to order item.
