She was a real woman - Theresa De Francisci, wife of the designer of the coin - and lovely in her own right.
There's an '97 Cook Island "Princess of Wales", '07 Cupro nickel (her & sons), '97 Liberia "young teacher", ,97 1000 Dobras proof, and probably more I don't know about. The Cook Island one is on my hunt list.
The Haitian coin is pretty unusual for NCLT in that it was minted for two years. If memory serves though the 50 Gourdes face value was less than the value of a half ounce of silver so it could have circulated lightly. I've never actually seen a circulated coin.
The UK had two AFAIK, both crown or crown-sized pieces. One was issued in 1981 (wedding, face value 25p), the other one came in 1999 (in memory of, face value £5). Princess Diana always looked much better in real life than she ever did on a coin. It was as though she had something in her look that could not be conveyed into metal.
