Why is it that most old paper money has little to no premium, but old (60+ year old) coins and $500+ bills do?

Series 2009 $2's have been printed this year and should already be available. Some banks might have them, or you can get them on eBay. No difference in the design since 1976; only difference is the signatures (Rios/Geithner). As a federal reserve note, these are the only series of $2's so far: 1976, 1995, 2003, 2003A, 2009. Before that they were a United States Note. (Before 1976 the reverse was Monticello, not the Declaration of Independence.) Series 1953, 1952A, 1953B, 1953C, 1963, 1963A. United States Notes before 1953 were of an older design. 1928, 1928A, 1928B, 1928C, 1928D, 1928E, 1928F, 1928G. Anything before Series 1928 was various large size notes. Note that the series year does not necessarily (and usually doesn't) indicate the year they were actually printed; supposedly it's the year the issue was approved but the various Series 1928's date from 1928 all the way into the 1940's. (The newest series, 2009, wasn't actually printed and released until 2012.)
$2's are hard to come by lol... sometimes asking around banks will have a few. I'm trying to get some for birthday/Christmas/other special occasions for my nephew and niece to carry on the tradition my grandmother kept up that got me into coin collecting in the first place. Most of my $2's I bought online or from coin shops. This is still my favorite denomination and represents a majority of my US paper money collection lol... Just got a series 2009 in the mail from eBay. Trying to collect US $2's by series and missing only a few of the 28's before I can move back to the large size notes (of which I only have one so far, a 1917). I'm more active on the coin side of my collection than paper but always have room in my collection for $2's. (Favorite editions to my collection are $2's and anything with dragons on them... now if they'd combine them it would be perfect!*) *P.S.
