I would buy a high end texas commemorative half dollar, I just love their design.

 

Either a slabbed 1839-O Bust Half, something like an AU grade. Or an MS65 Antietam Commem, ideally with a CAC bean already on there.

 

Maybe a nice Cleopatra VII 80 Drachma in gVF/XF.

Unfortunately most of my dream coins cannot be had for $1000. Now give me $5-10k to buy something, and I could really get interesting.
