With a combined total of ten thousand years experience and knowledge out there I'm sure someone has the answer for this so please enlighten me.

    1883 no cents - mintage around 5.5 million - ms-60 is $25.00
    1883 with cents - mintage around 16 million - ms-60 is $160.00

The story I've heard before was that people thought the one without cents would be "confiscated" so they hoarded them and therefore there are more around in good condition than the version with cents. Even if that's true it seems to me that the discrepancy in the total mintage of the coins would make up the price gap.

Number of surviving examples trumps mintage.

Easy, as it was said, surviving population is the key. 1883 No Cents were kept as a curiosity... that is why you can find really nice examples, like mine :)

Very simple. The 1883 with no cents were saved in great numbers, while the with cents version were not. You can find this info in the RED book.

That's true. You basically answered your own question. And a No Cents in Good is worth 6 bucks meanwhile one in AU is worth $11.
