In all honesty the most user friendly and best coin software I ever saw was a program called Coin Elite. It is fully customizable in regard to data and can print customized reports.
That said, I will email you an Excel spreadsheet that I built several years ago. It may not be suitable for your purposes but at least you'd have a template to work with. You could just clear contents or change headers & entries to suit you.
